Firni is a dessert made from rice and milk, much lighter than the British and North American baked rice puddings.
Firni is popular in South Asia and the Middle East. In Azerbaijan, firni is made from rice flour, not grains of rice.

Cooking time: 20 min
- 200 ml/7 fl oz milk
- 50 g/2 oz rice flour
- 25 g/1 oz sugar
- Pinch of salt
- Butter (optional)
- Mix the milk, sugar, salt and rice flour in a pan. Put over a low to medium heat and stir continuously until the mixture thickens.
- Remove from the heat and place on individual dessert plates. Decorate with cinnamon and, if using, butter. Firni is usually served cold, but can also be served hot.
