Badam-buri is a sweet pastry filled with almonds and sugar.

One of the Azerbaijan classical pastries is badam-buri which takes it name from almond (badam). Badam-buri contains almond, sugar powder sugar and cardamom.

Cooking time: 30 min
Serves: 5-6


  • 400 g/1 lb flour
  • 225 g/9 oz sour cream
  • 225 g/9 oz almond
  • 25 g/1 oz sugar powder
  • 225 g/9 oz sugar
  • 2 tsp oil
  • Pinch of cardamom
  • a drop of cooking soda


  • Knead dough adding sour cream and cooking soda. Keep for 20-25 min. (One can use yeast dough). Roll out 4-5 mm thick and cut out. 8 cm diameter rings. Place in the centre 15-20 gr of stuffing made of pounded almond and sugar powder. Aromatize with cardamom. Stick edges and shape pancakes. Fry in oil, cool down and sprinkle with sugar powder.
