Fish cutlets have significant place in Azerbaijan cuisine and very delicious with narsharab.
Fish cutlets is one of the favorite dishes in Azerbaijan. “Cutlet” refers to a few dishes, mostly cuisines fried in batter or bread crumbs. The most common cutlet is just a thin cut of meat-especially beef, mutton, chicken or fish. These dishes take only a couple minutes to fry up and offer the chef many variations of how to prepare it.

Ingredients
- 200 g/8 oz filleted fish
- 25 g/1 oz melted butter
- 75 g/3 oz milk or water
- 50 g/2 oz wheat bread
- salt & pepper
Preparation
- Cut filleted sturgeon or starred sturgeon into pieces and mince with onions. Add salt, pepper, soaked piece of bread (in milk or water) and mix. Shape cutlets or balls, roll in dried crumbled bread powder and fry in butter. Serve with garnish of fresh vegetables. Serve narsharab separately.
