  • 200 g/8 oz flour
  • 525 g/1 lb 5 oz sugar powder
  • 275 g/11 oz melted butter

  • Prepare syrup from sugar powder, add citric acid and boil away to obtain the caramel mass. Pour the caramel mass on a buttered marble table, cool to 70-75 C and stretch by hands until it becomes complete white. At the same time heat up butter in a frying pan and brown the flour.
