Walnut or almond rolls

Nuts and dried fruit are an ingredient in many different Azerbaijani cakes and pastries.

These rolls can be made with almonds or walnuts or a mixture of the two (walnuts on their own can be bitter).

  • 425 g/1 lb 1 oz wheat flour
  • 200 g/8 oz sour cream
  • 125 g/5 oz butter
  • 200 g/8 oz walnuts
  • 175 g/7 oz sugar powder
  • 50 g/2 oz honey
  • pinch of cinnamon
  • 1 egg


  • Make pastry and stuffing similar to roll in Ordubad style. Split pastry into 40 gr helpings. Roll out each portion into strip with one end wider than another. Place 30 gr of stuffing on wider end and roll up. Coat surface with yolk and bake at 180-200 C during 20-30 min. yeast pastry is used as a rule.
