Salads are great for any type of meal, whether a light lunch or as a filling main course at dinner. They can even be one of the courses in their own right. Salads bring balance to the meal by providing a refreshing accompaniment to just about anything. A light salad brings great balance to a heavier dish.

- 2 cucumbers
- 2 tomatoes
- 1 sweet capsicum
- a few sprigs of coriander, spring onions and basil
- 3-4 drop of vinegar or abgora
- salt & pepper
- Cube cucumbers, tomatoes and sweet capsicum, add finely shredded greens, vinegar, pepper, salt and mix. Use a teaspoon when eating.
