Capscium has special taste and flavor which makes pickle very delicious.
These pickles make a delicious addition to an platter or tossed through salads.

- 1 kg/2.2 lbs capsicum
- 150 g/6 oz salt
- 350 g/14 oz vinegar
- Take young green capsicum, wash and place into a deep dish. Pour on 4-5% salt solution. Press with weight, close hermetically and age 6-8 days. During this time the capsicum colour gradually becomes yellowish. Then pour out the brine and pour on vinegar. Soak till readiness.
