Kourma is pieces of mutton or lamb on the bone (blade chops) stewed with onions, tomatoes, and saffron.
Kourma is one of the traditional Azerbaijan dishes which is delicious with saffron infusion broth, alycha and lamb. Kourma is served in frying pan and with lemons.

Ingredients
- 275 g/11 oz mutton
- 25 g/1 oz onions
- 25 g/1 oz dried alycha
- 1/6 lemon
- a few threads of saffron
- salt & pepper
Preparation
- Cut mutton into 25-30 gr pieces, pepper, salt, add onions and brown. Add broth, saffron infusion, rinsed alycha and stew to readiness. Serve in one helping frying pan: put lemon slides on top.
