Kutabs with green and cottage cheese
Domestic or wild herbs with cottage cheese comprise the filling in this vegetarian version of a gutab.

While the process of folding a circle of dough over the filling is the same, the ingredients vary from region to region, as cooks use the wild herbs that are available. Coriander, chives and parsley are common ingredients; nettle, wild coriander or watercress may also be included. Like many other Azerbaijani dishes, this type of gutab is topped with plain yogurt.

  • Herbs:
  • 75 g/3 oz spinach
  • 75 g/3 oz sorrel
  • 25 g/1 oz spring onions
  • 25 g/1 oz coriander and dill
  • 100 g/4 oz cottage cheese
  • 150 g/6 oz wheat flour
  • 25 g/1 oz melted butter
  • 1/5 egg
  • salt & pepper


  • Wash greens, cut and stew with shredded onions. Add cottage cheese, salt, pepper and mix thoroughly. Knead dough adding eggs and salt. Roll 1 mm thick and cut into small rings. Wrap stuffing in crescent shape and fry both sides without butter. Pour on heated butter when serving.
