Nut rolls are delicious pastries derived from Azerbaijan cuisine.

Azerbaijan cuisine is rich with sweets and pastries. Nut rolls is one of the unique and delicious example of Azerbaijan pastries. Each nut roll is a pastry made from yeast bread with one or more fillings.

  • 400 g/1 lb wheat flour
  • 175 g/7 oz sour cream
  • 125 g/5 oz butter
  • 225 g/9 oz peeled walnuts
  • 175 g/7 oz sugar powder
  • 50 g/2 oz honey
  • pinch of cinnamon
  • 1 egg


  • Mix butter with sour cream and knead dough.
  • Stuffing: brown walnuts, crumble, mix with sugar powder and honey , season with spices. Divide dough into 300 gr helpings and roll out round flat cake 3-4 mm thick. Spread evenly 200 gr of stuffing and roll up. Coat surface with yolk and bake at 180-200 C during 30-35 minutes. Sometimes one can knead yeast dough.
