Ovma - Sheki fyatir
Ovma-Sheki Fyatr is sweet and tasty, and very easy to make.

Azerbaijan cuisine is rich with pastries and deserts. You can eat pastries with tea and every time you want.

Serves: 5-6


  • 625 g/1 lb 9 oz wheat flour
  • 200 g/8 oz sugar
  • 75 g/3 oz butter
  • 150 g/6 oz fresh milk or matsoni
  • pinch of yeast
  • a few mixture of spices (cardamom, ginger, coriander seeds, cinnamon, nutmeg)
  • 2 eggs
  • a few threads of saffron
  • a few poppy seeds
  • salt to taste


  • Make rich sponge dough. Use poppy seeds, egg yellow and part of the saffron infusion for decorating ovma. When the dough rises, divide it into portions of 70-80 g and roll into cakes 15-20 mm thick and measuring 180-190 mm in diameter. Adorn with an ornament and leave for 25-30 minutes. Brush with an egg diluted with saffron infusion and sprinkle with poppy seeds. Bake for 30-35 minutes at a temperature of 190-220°C.
